In an almost finished dining room in the heart of Galway city, Enda McEvoy is indulging in a bit of post-pandemic fantasy.

“That door goes straight into Druid,” he says, pointing to his left. “So if you’re going to a show, you’ll be able to have a bite to eat beforehand, then maybe come in afterwards for a glass of wine and some charcuterie.”
