He runs ultra-marathons and, when it comes to restaurants, this Michelin-starred chef has really gone the distance. Jillian Bolger met him in Dublin
Michel Roux jr loves to run. Not the gentle jog or occasional park run, but marathons, and lots of them. To date, he has run 21, as well as several ultra-marathons. One year he squeezed in three marathons and one ultra. “I was basically training all year round,” he chuckles.
So, no downtime then?
“The running was downtime,” he insists.
