Restaurateurs will increasingly have to reverse engineer their menus to account for rising costs and the financial pressures facing diners, according to Domini Kemp.

The chef and restaurateur, who has just opened Lottie’s in Rathmines in Dublin with Brian Montague, her business partner, told the Business Post that the pair had first identified the prices they wanted to charge for dishes, and then devised the menu around those prices.
