Easy berry compote
Whether it’s with pancakes, ice cream, scones or simply out of the jar with a spoon, berry compote is a gorgeously fruity condiment to have on hand.
Ingredients, makes one jar
400g mixed berries
75g caster sugar
1 squeeze lemon juice
1 tsp vanilla extract
1 tbsp water
Method
1. Add all the ingredients to a pot and bring to the boil.
2. Allow to simmer for 15 minutes until the mixture becomes syrupy, but the fruit is still intact.
3. Serve over pancakes with some crème fraîche, Greek yoghurt or mascarpone.
