The food at the Cove in Fota Island Resort focuses on celebrating the wide variety of produce on offer in Cork

Finola Twomey would encourage everyone to take a trip to Cork to explore some of the treasures to be found in this food-rich part of the world.

Base yourself in the luxurious five-star Fota Island Resort, so you can head off during the day to discover the delights of the world-class English Market, visit Ballymaloe’s wonderful gardens and shops, or stock up on artisan goodies at the market in Midleton, and then enjoy dinner in Fota’s own destination restaurant that evening, the Cove.

“The Cove at Fota Island Resort’s menus are all about celebrating the produce of this part of the country, emphasising pride in place, and reflecting its location thoughtfully through the exceptional larder of this part of the world,” said Twomey, who is director of sales and marketing for Fota Island Resort.

“Our head chef Maris Urbanovics creates imaginative and skilful seasonal menus, drawing on fine local and foraged ingredients, showcasing some of Cork and the region’s most talented and dedicated artisan producers.”

The Cove is quietly luxurious and elegant, where the food on the plate feels both personal and connected – a sophisticated bringing together of ancestral flavours, foraged elements and meticulous techniques.

An intimate and polished setting with its own wine cellar, the sommeliers at the Cove have curated wine pairings designed to complement the flavours of the food, said Twomey.

The seasonal tasting menu at the Cove is available for €75 per person with the sommelier’s matching wine pairings for €45 per person, and the set menu is €65 per person with matching wines for €35.

Guests to Fota Island Resort can now enjoy the newly appointed five-star self-catering lodges set on the idyllic grounds of the resort.

Twomey said: “The ideal way to make the most of your own personal space, the super comfortable and stylish self-catering lodges are situated in the Courtyard, Courseside or in Fuchsia Woods at Fota Island Resort, a selection of cosy and attractive two, three and four-bedroom lodges that provide a home from home when travelling with family, a group of friends or fellow golfers.”

As with everything at Fota Island Resort, the lodges are an ideal mix of the traditional and the cutting-edge – from kitchens and appliances to in-house entertainment and IT systems, their amenities are top of the range.

Every lodge has been tastefully decorated, with modern home comforts, and all lodge guests have access to the excellent activities, championship golf, luxurious spa and dining options throughout the resort as well as dedicated Fota Island Adventure activities during school holidays, meaning you can plan your day just the way you want it.

Ideal for groups of golfers, families or private parties, a Courseside Lodge will make the absolute most of any golfing time, or a Courtyard or Fuchsia Woods Lodge is only a five-minute stroll from the hotel and all of its amenities, said Twomey.

“With cleaning and linen service, private laundry and dry cleaning, the combination of luxury, privacy and convenience in the Lodges at Fota Island Resort is irresistible,” she said.

“Summer at Fota Island Resort is more luxurious than ever, with the same wonderful charm guests know and love.”

“Home to fantastic facilities on site like Fota Adventure, the leisure centre, walking routes and fairy trails through the 780 acres of lush countryside, the adults can sit back, relax and unwind in Fota Island Spa or experience a game of golf on Fota Island Resort’s magnificent championship golf courses.

“This year we want to create unforgettable experiences for our guests as people continue to reconnect with family and friends and come to discover the wonderful holiday destination of East Cork,” Twomey said.
