In the 30 years since he opened Dublin eatery Gallagher’s Boxty House in Temple Bar in 1989, chef Pádraic Óg Gallagher estimates that he has served more than four million customers.

In that time, he has seen many changes in Ireland’s culinary scene, from the rise of high-priced establishments during the boom years to the more recent popularity of casual dining and international cuisine.
