Gill Carroll, the owner of eatery 37 West in Newcastle in Co Galway, is opening a second restaurant in Galway city at a cost of €90,000.

Situated on Shop Street, 56 Central will employ 19 people in the same premises that housed Lynch’s Cafe until its closure at the start of the month.
