A Cork food company specialising in baked gluten-free crisps has closed a €465,000 funding round. Established in 2012, Veronica’s Snacks makes baked potato and vegetable crisps in four flavours, as well as baked corn crisps for children under the Cru

Founder Veronica Kenneally will use the investment from AIB Seed Capital, the Boole Investment Syndicate and chartered accountant Brian McGann, to develop new flavours and pack sizes, and expand overseas.

A graduate of University College Cork’s degree course in food science and business, mother-of-two Kenneally came up with the idea for the venture during a family picnic.
